We source beef fat from American producers and slow-render it at a USDA-inspected facility in Illinois. We use a nose-to-tail approach — more depth of flavor, less waste, and full respect for the animal.
Tallow is rendered beef fat. Lard is rendered pork fat. Both are excellent traditional cooking fats — they just differ in flavor profile and fatty acid composition. Tallow is firmer at room temperature and has a more robust, savory taste.
Cooking with Tallow
Approximately 400°F (204°C). That's high enough for searing steaks, deep frying, roasting, and cast-iron cooking without breaking down or producing harmful compounds.

Storage & Shelf Life
Typically one year sealed at room temperature — longer if refrigerated or frozen. Every container ships with a clear printed expiration date so there's no guesswork.
Not required. Tallow is shelf-stable at room temperature thanks to its naturally low water content and high saturation. That said, refrigeration extends shelf life noticeably, and it freezes well if you'd like to store it long-term.
Keep it sealed in a cool, dark place — a pantry shelf works perfectly. After opening, refrigerate for best freshness. Avoid moisture and cross-contamination by using a clean utensil each time.
